Directions

  1. •Preheat the oven to 375 degrees F.
  2. •In a medium-sized bowl, combine cane sugar, baking soda, semisweet sugar-free chocolate chips and all-purpose flour.
  3. •In a small bowl, mix vegan butter, almond milk and vanilla extract; beat until creamy.
  4. •Combine all the ingredients to make the chocolate chip dough.
  5. •Spoon in teaspoon-sized dough on the cookie sheet; bake in the oven for 10 minutes.
  6. •Once the cookies are soft in the middle, remove from the baking sheet and allow it to cool on a cookie rack before serving it.

Lunch: Beany Burger with Walnuts and Oats

Ingredients

  • 1/2 cup walnuts
  • 1 tablespoon flax seeds
  • 1/2 cup rolled oats
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 cup cooked sweet potato
  • 2 cans black beans
  • 1 small white mushroom
  • 1/2 teaspoon soy sauce
  • 1 cup almond milk
  • 1/4 cup onion
  • 3 cloves garlic
  • 1/2 cup vegetable oil
  • 6 slices of whole grain bread

Directions

  1. •In a food processor, add walnuts, flax seeds, rolled oats, salt, paprika and ground cumin; process until rough.
  2. •In a food processor, process the cooked sweet potatoes and black beans until smooth.
  3. •Transfer the beans mixture into a bowl; set aside.
  4. •In a small bowl, combine the white mushrooms, soy sauce, almond milk, onions and garlic; add to the beans mixture.
  5. •Lightly grease your hands with olive oil and roll the mixture into patties.
  6. •In a skillet, cook the patties for 5 minutes per side.
  7. •Serve the burgers on whole grain bread and enjoy!

Dinner: Vegetable Salad with Hummus and Mini Pita Pizzas

  • 1 and ¾ cup + 2 tablespoon whole grain spelt flour

  2. •In a small bowl, pour in warm water and add the yeast; leave for 5 minutes.
  3. •Meanwhile, in a medium-sized bowl, add oil, salt, maple syrup, lemon juice and 1 and ½ cup of spelt flour; mix the ingredients to make the dough.
  4. •Dust your tabletop with flour and transfer the spelt dough; knead for 10 minutes.
  5. •Roll the dough into a small ball and let it rest for about 20 minutes; cover dough with a towel.
  6. •Roll the dough balls to small pita sizes and bake for 4 minutes; set aside.

  • 1 bottle of raw Hummus (store-bought)
  • 5 cloves fresh garlic
  • ¾ cup olive oil (extra virgin)
  • ½ teaspoon of freshly ground black pepper
  • 1 tablespoon fresh basil
  • 3 tablespoon lemon juice
  • 1 tablespoon fresh oregano
  • 2 tablespoon red wine vinegar
  • 1 teaspoon maple syrup
  • ½ teaspoon sea salt

Directions

  1. •Puree all the ingredients in a small blender.
  2. •Let the pureed mixture set for 1 hour; refrigerate until serving time.
